About the Recipe
A rich Christmas pudding that is great in any weather. Serve it with custard for a truly decedent dessert.
Ingredients
60g butter
90ml brown sugar
250ml Milk
12 dates pitted and chopped.
1 cup of cake/fruit mix
Zest of 1 orange.
1 tsp baking soda
250g self-raising flour.
1 Tbsp cinnamon

Preparation
Grease a pudding mould, stainless steel, or glass dish.
In a pot combine the butter, milk, dates, raisins, currants, mixed fruit peel and zest of the orange, and bring to boil.
Remove from heat and stir in baking soda.
Sift in the flour, cinnamon and salt; blend well.
Pour into prepared dish and cover with two layers of baking paper, secure around the side of the bowl with string or elastic bands.
Steam for 2 hours or until the pudding is set.
