About the Recipe

Lentils are a fantastic base for a vegetarian burger due to their earthy flavour and high protein content. When combined with mushrooms, which have a meaty texture and umami richness, you get a burger patty that is both hearty and delicious.

Ingredients

  • 1 cup cooked lentils (green or brown)

  • 1 cup finely chopped mushrooms (portobello or cremini work well)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup breadcrumbs

  • 1 tablespoon soy sauce

  • 1 tablespoon olive oil

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)

  • Salt and pepper to taste

Preparation

  1. Heat the olive oil in a pan and sauté the onions, garlic, and mushrooms until softened and browned.

  2. In a large bowl, mash the lentils with a fork or potato masher.

  3. Add the sautéed mushroom mixture, breadcrumbs, soy sauce, and flax egg to the lentils. Mix until well combined.

  4. Shape the mixture into patties and refrigerate for 20 minutes to firm up.

  5. Cook the patties in the oven or in a pan until golden brown on both sides.
